Ingredients
700g chicken (bone-in or boneless thighs recommended)
1 large onion, finely chopped
4 garlic cloves, minced
1-inch ginger, grated
2–3 medium tomatoes (or ½ cup heavy cream for creamy version)
1 cup chicken broth
2 tablespoons oil or butter
1 teaspoon cumin
1 teaspoon paprika
½ teaspoon turmeric
Salt and pepper to taste
Optional: 1 tablespoon flour or cornstarch (for thickening)
Instructions
Wash and pat dry the chicken. Marinate with salt, pepper, lemon juice, and turmeric.
In a deep pan, heat oil or butter. Sear the chicken pieces until golden. Set aside.
In the same pan, sauté onions until golden brown. Add garlic and ginger. Cook for 1 minute.
Add cumin, paprika, and turmeric. Stir for 30 seconds to bloom spices.
Add chopped tomatoes and cook until soft. Or, stir in cream for a creamy version.
Pour in chicken broth and stir. Let it come to a light simmer.
Add the seared chicken back into the pan. Cover and cook on medium-low for 20–25 minutes.
Optional: Mix flour or cornstarch with water and stir in to thicken.
Simmer uncovered for 5 minutes if needed.
Serve hot with rice, naan, or mashed potatoes.
Notes
Bone-in chicken gives the best flavor.
Add fresh herbs like rosemary or bay leaf for added depth.
This dish stores well and tastes better the next day.
For extra creaminess, stir in a tablespoon of butter just before serving.
