Ingredients
• 2 boneless, skinless chicken breasts, pounded to even thickness
• 1 tbsp olive oil
• 2 cloves garlic, minced
• 1/2 cup chicken broth
• 1/4 cup fresh lemon juice
• 1 tbsp chopped fresh parsley
• 1 tsp dried oregano
• Salt and pepper to taste
Instructions
Step 1: Cook Chicken (10 minutes)
1. Season chicken breasts with salt and pepper.
2. Heat olive oil in a large skillet over medium-high heat.
3. Add chicken and cook for 5–7 minutes per side, until golden brown and cooked through.
4. Remove chicken from the skillet and set aside.
Step 2: Make Sauce (5 minutes)
1. In the same skillet, add minced garlic and cook for 30 seconds until fragrant.
2. Pour in chicken broth and lemon juice. Bring to a simmer, scraping up any browned bits from the bottom of the pan.
3. Stir in parsley and oregano. Simmer 2–3 minutes to reduce slightly.
Step 3: Combine & Serve (2 minutes)
1. Return the chicken to the skillet and spoon the sauce over it.
2. Serve immediately with rice, pasta, or roasted vegetables.
Notes
Pound the chicken breasts evenly for quicker, even cooking.
Add a splash of cream for a creamy lemon herb variation.
Great with mashed potatoes, couscous, or roasted green beans.
