  • ¼ cup (20 g) unsweetened cocoa powder

  • ¾ tsp kosher salt (divided)

  • 1 ½ cups roasted, salted pistachios (divided)

  • 2 tbsp pistachio paste (or pistachio butter)

  • ⅔ cup (113 g) white chocolate chips

  • 2 tbsp heavy cream

  • Cooking spray (for pan)


Instructions

  1. Preheat oven to 350°F (175°C). Grease and line an 8×8″ baking pan.

  2. Brown the butter in a saucepan. Once golden and nutty, remove from heat and stir in dark chocolate chips to melt. Cool slightly.

  3. In a large bowl, whisk together sugars and eggs for 2–3 minutes until thick and pale. Add pistachio paste and vanilla.

  4. Whisk in the butter-chocolate mixture.

  5. Sift in flour, cocoa, and ½ tsp salt. Fold gently.

  6. Stir in half the pistachios and half the white chocolate chips.

  7. Pour into the pan and bake 30–35 mins. Cool completely.

  8. Heat cream and stir in remaining white chocolate to create ganache. Pour over brownies.

  9. Top with remaining pistachios and refrigerate until set. Slice into 16 squares.

  • Substitute pistachio butter for a smoother flavor.

  • To intensify green color, add a drop of natural matcha powder (optional).

  • Ganache is optional but adds elegance.
