  • 1 large Egg

For the Glaze:

  • 1 cup Powdered Sugar

  • 23 tablespoons Milk or Heavy Cream

  • ½ teaspoon Instant Espresso Powder

  • Pinch of Pumpkin Pie Spice (optional, for garnish)


Instructions

    1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.

    2. In a medium bowl, whisk together flour, baking soda, pumpkin pie spice, and salt.

    3. In a large bowl, beat butter and sugar with an electric mixer until light and fluffy (2–3 minutes).

    4. Add pumpkin purée, egg, and vanilla extract to the butter mixture. Mix until combined.

    5. Dissolve espresso powder in 1 tsp hot water and stir into the wet mixture.

    6. Gradually add dry ingredients to wet mixture. Mix just until combined.

    7. Scoop dough onto prepared baking sheets, spacing about 2 inches apart.

    8. Bake for 12–15 minutes, until edges are golden and centers look set.

    9. Cool 5 minutes on the pan, then transfer to a wire rack to cool completely.

    10. While cookies cool, whisk together glaze ingredients until smooth.

    11. Drizzle glaze over cooled cookies and sprinkle with pumpkin spice if desired. Let set for 30 minutes before serving.
