  • Slowly add warm broth, whisking to avoid lumps.
  • Simmer until thick (5–7 mins). Season to taste.

Notes

For best flavor, use homemade or low-sodium chicken broth and add seasonings gradually. If using pan drippings, be sure to separate the fat for a smoother gravy. Always warm your broth before adding to the roux to prevent lumps. Gravy thickens as it cools—add a splash of broth when reheating to bring it back to pouring consistency.
