Ingredients
- 2 large eggs
- 2/3 cup granulated sugar
- 1 cup all-purpose flour
sifted
- 1 teaspoon baking powder
- 1/2 cup unsalted butter
melted
- Zest of 1 lemon
- 1 teaspoon pure vanilla extract
Instructions
Beat eggs and sugar until thick and pale.
Add lemon zest and vanilla.
Fold in sifted flour and baking powder.
Gently incorporate melted butter.
Rest batter for 1 hour in the fridge.
Fill buttered madeleine molds and bake at 375°F for 8–10 minutes.
Cool slightly and unmold onto wire racks.
Notes
Resting the batter is essential to achieve the traditional hump on madeleines. Don’t skip this step for best results.
