Instructions
 

  • Beat eggs and sugar until thick and pale.
  • Add lemon zest and vanilla.
  • Fold in sifted flour and baking powder.
  • Gently incorporate melted butter.
  • Rest batter for 1 hour in the fridge.
  • Fill buttered madeleine molds and bake at 375°F for 8–10 minutes.
  • Cool slightly and unmold onto wire racks.

Notes

Resting the batter is essential to achieve the traditional hump on madeleines. Don’t skip this step for best results.
