Pumpkin French Toast Casserole

Ingredients
  

  • 1 loaf brioche bread cubed
  • 1 cup pumpkin puree
  • 6 large eggs
  • cups whole milk
  • ½ cup brown sugar
  • 1 tbsp pumpkin pie spice
  • 1 tsp vanilla extract
  • 2 tbsp melted butter

Instructions
 

  • Preheat oven to 350°F.
  • Grease a 9x13-inch baking dish.
  • Place bread cubes in the dish.
  • In a bowl, whisk together pumpkin, eggs, milk, sugar, spice, and vanilla.
  • Pour custard over bread; soak 2 hours or overnight.
  • Bake for 45–55 minutes until golden.
  • Cool slightly before serving with toppings.
